The breathing drill is intended to find out how frequently you need to breath in order to supply oxygen to your effort. The author thinks 2-3 strokes is optimal. I usually breath every 4 strokes, which I find comfortable. However, I think that breathing every 4 limits my oxygen and I've reached a sort of "plodding" pace where I don't (or can't) push myself to speed up. So breaking it up was interesting. I think I may be a 3-stroker in a race and then do my siting when I'm breating on my left. (since that's my most comfortable side).
One interesting thing I learned is that we swim faster when (a) we are fully submerged and dolfin kicking (hence the race requirement that people need to surface within X-distance) and (b) when we are on our sides (!) Which means more-frequent breathing = more time on your side = faster.
Voila'. Drag and Lift and bouyancy... Science is cool.
