If you like beets, I've discovered that sauteed thin-sliced beets + onions + chard (put in last, covered just to steam it till it's wilted) is an excellent combo. Complementary flavors and all that. Beets and chard are close relatives botanically, so if there are decent beet greens you can throw them in too.
ETA: And both in the same botanical family as quinoa. All three have those weird seeds that look like spaceships with the sprout curled around the outside.
